Culinary cooking tour in Vietnam

A recent Peregrine tour headed off to discover the exotic tastes, smells and sights of Vietnam. The 10-day Vietnam Culinary Journey goes beyond the major highlights and delves into the heart of this fascinating country. 

The group sent us some great images, and we wanted to show you the sorts of thing you can expect from market trips, cooking schools and excellent sightseeing on this culinary adventure.

KOTO
KOTO stands for Know One Teach One. It's a not for profit vocational training program set up to change the lives of Vietnam's street and disadvantaged youth. Established in 1999 it has grown from a small café in Hanoi to a 200 trainee capacity, multi-location, internationally accredited hospitality program. 

On your visit here, you'll take a traditional Ha Noi cooking class with a KOTO graduate and hear their inspirational story. Some of the dishes you might cook include prawn and green rice in betel leaf, fried spring rolls, green paw paw salad with dried beef, bbq pork cooked two ways and fruit cups.

Red Bridge Cooking School
Here you'll enjoy a well-paced, fun course that takes you to colourful local market gardens where you will pick herbs to use when making your dishes. On this particular trip, the group cooked with Phi (pictured below), an experienced chef. They cooked rice noodles by hand to put in rice noodle soup, lemongrass shrimp wrapped in banana leaves with lime dipping sauce, claypot fish with dill and banana flower salad.

Vietnam cooking school
Continue practicing your traditional cooking techniques here, where you might make dishes including spring rolls again, carmelised pork in claypot, sour clam soup with dill and sauté banana in coconut milk. This is a very authentic experience, and you might even meet the two resident cats who curl up asleep on the sideboards!
