Basque cooking is the world’s finest: discuss. The 19th century traveller Richard Ford somewhat sniffily proclaimed that “gastronomy never was an Iberian science.” Gloriously, in the Basque country, they have raised cooking to an art. The iconic dish here is cod served with salsa vizcaina(a sauce of red onions and peppers). Try it, but don’t miss out on the tapas. Get to Casco Viejo, the city’s old quarter, and then get bar-hopping. This area is awash with great eateries, and pintxos line the bars here – elaborate little creations of gorgeous food, a form of tapas unique to the Basque - truly works of delicious art. Find some elbow room at the bar, munch merrily on the crabs and octopus, jamon and conejo, and be sure to wash it all down with some Asturian cider or Rioja. Remember, you have the rest of your life to diet.
