
Lima is home to Peru’s finest cuisine, with the country’s best restaurants and lively markets fuelled by great local produce and a sense of adventure. A must is ceviche, a national specialty where raw fish is ‘cooked’ by being marinated in lime juice, and served with onions and chilli. Sea bass is traditionally used, although you may also find halibut, sole or shrimp on any self-respecting cevicheria menu. The elegant colonial centre takes up your days in Lima, but taxi-ing over to the bustling Miraflores neighbourhood to seek out some local eateries makes for a tasty evening.
